This Salmon with Avocado Puree with Edamame dish provides the flavor of avocado but is lower in fat and is also a great low carb choice. Salmon is a healthy source of omega-3 fatty acids, protein, B vitamins as well as potassium while avocado contains almost 20 vitamins and minerals and is one of few fruits that contain heart-healthy monounsaturated fat (good fat). It is also sodium, sugar and cholesterol-free! To add even more protein and vitamins (especially vitamins C and K), just add Edamame. This delicious and easy recipe is a must try!
Serves 4
4 (8-oz.) salmon fillets, skin removed
Salt and pepper to taste
2 ripe avocados, pitted and skin removed
2 cups vegetable broth, warmed
1 cup shelled edamame beans
Salt and pepper
Directions:
Heat a non-stick skillet over high heat. Season the salmon with salt and pepper. Add the salmon to the pan (no oil). Cook for 2 minutes then reduce the heat to medium. Turn the salmon and cook for another 3 minutes. Turn again and cook for 2 minutes more or until desired doneness.
While salmon is cooking, puree the avocados the vegetable broth using a stick blender or regular blender.
Divide the avocado puree among 4 plates.
Top each with a salmon filet.
Sprinkle ¼ of the edamame beans onto each plate.
