Join Chef Daniel Green for Tasty Tuesday! ? This week he creates one of his favorites – Ceviche Salad with scallops. Healthy, fresh and most important – healthy!

Daniel shares the recipe below:
1/4 finely chopped red onion
Eight large scallops
1 scallion Finely chopped
1 tablespoon of chopped fresh cilantro
1/2 jalapeño pepper finely chopped
Juice of one lemon
2 tablespoons olive oil
Salt and pepper to taste
Slice the scallops into very thin slices, mix in a bowl with 1/2 the lemon juice and 1/2 the oil and set aside. Now makes everything else in a mixing bowl along with the remaining lemon juice and olive oil. Toss in the scallops and serve.
