Daniel shares the recipe below:
Serves 4
3 cups couscous
12-16 cherry tomatoes cut in half
1 zucchini diced and saluted
1 tablespoon white vinegar
1 teaspoon Dijon mustard
3 tablespoons olive oil
1 tablespoon chopped mint and basil
To make the cous cous, place in a bowl and pour boiling hot water over just to cover, than place a plate over the bowl for 5 minutes. Then fluff it all up with a fork and add the, olive oil, zucchini, tomatoes, basil and mint. Mix the mustard, olive oil and vinegar and mix in to the couscous.
