Orange and Coriander Salad | Tasty Tuesday with Daniel Green | 2021

Join Chef Daniel Green for Tasty Tuesday! ? This week he cooks up a healthy Chicken Salad Recipe!

This has an oriental touch to the dish with the freshness and flavor of the coriander. It also has a ton of Vitamin C thanks to the oranges and pomegranate seeds

Daniel Shares the Recipe:

Orange and Coriander Salad

Serves 4

Prep time 10 minutes

Ingredients:

4 large oranges

4 chicken breasts

A handful of fresh coriander leaves

3 tablespoons olive oil

1 tablespoon fresh lemon juice

200g cup pomegranate seeds

Cooking Instructions:

Take off the skin from the chicken breasts and slice each one into about 4-5 strips. Heat a nonstick pan with a tablespoon of olive oil over high heat. Add the chicken and cook for about 3 minutes on each side then turn off the heat. Let the chicken stand until cool so it cooks all the way through. Now peel the oranges and slice into ½ inches and place in a large mixing bowl, roughly chop the coriander and add to the bowl, drizzle the bowl with olive oil, lemon juice, and pomegranate seeds, toss well, and serve with the grilled chicken.
